Yummiest Pizza- really!

Tonight I made the yummiest dinner, so yummy that I wish I had leftovers to munch on now! I made homemade pizza and a lemony feta cheese salad.  I actually was not hungry and made the pizza for my husby, but once it was done I could not resist the thin crispy crust, tangy sauce and bubbly cheese,. The best part was I made the dough last week, and froze the  leftover dough so dinner tonight was s cinch.  I just defrosted, rolled it out and topped with sauce and cheese, and twelve minutes later we were munching away! The salad has no real recipe, just mash up some feta cheese with lemon juice, olive oil, garlic and pepper (no salt needed since the feta is super salty) and toss with any salad greens you like.  I always find that if I eat my pizza with a side of salad the greens negate any carb or cheese…well it makes sense in my head and I am sure once you taste this pizza salad combo you will fee the same 🙂

Yummiest Pizza- really!

Tomato Sauce

6 oz of tomato paste

1-2 teaspoons of garlic powder

1 teaspoon salt

1 teaspoon olive oil

Pizza Dough

Makes 4-5 individual pizzas

2/3 cup of water

1 teaspoon honey

1 teaspoon salt (I like sea salt)

1 tablespoon olive oil

2  cups  + 6 tablespoons of flour

1 packet/envelop of yeast or 1 ½ teaspoons

1 ½ teaspoons of vital gluten (optional)

  1. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  2. In a large bowl, combine 2 cups bread flour, olive oil, salt, honey, vital gluten and the yeast mixture; stir well to combine. Mix well until a stiff dough has formed. Knead for about 5 minutes.  Cover and rise until doubled in volume, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (175 degrees C).
  3. Cut dough into 4 or 5 pieces, depending on how many pizzas you want to make. Turn dough out onto a well floured surface. Form dough into a round and roll out into a pizza crust shape. Cover with tomato sauce and shredded mozzarella cheese and any other topping you desire.
  4. Bake in oven until golden brown. About 12 minutes for a smaller pie, and 15-20 for a large family sized pie or until golden brown.

Slice, eat and enjoy!!
